I made this on the fly and it was so good, I had to share it! I do want to mention, that I made this to use up leftover broccoli and only used half of the tofu I fried up, That being said, if you have a full package of broccoli and tofu, you may want to double the rice and cheese sauce. Alternatively, you could use the tofu for a "chicken salad" or in a wrap and the broccoli as a side dish.

Ingredients:
For the tofu;
1 pack of extra firm tofu (I used Nasoya)
2 tsp of poultry seasoning
2 tsp of garlic powder
1 tsp of oregano
1 tsp of onion powder
1 tsp of parsley
Salt and pepper to taste
For the cheese sauce:
3/4 cup of coconut milk
3 Tbs of Nutritional yeast
2 Tbs of Arrowroot
1/2 tsp of garlic powder
1/4 tsp of onion powder
1/4 tsp of oregano
1/4 tsp of parsley
Salt and pepper to taste
2 cups of brown rice
1 bag of frozen chopped broccoli
Directions;
Using a handheld grater, grate the tofu using the slicing side of the grater. This will create larger slabs if you would like them smaller, break them up with your hand. Press firmly between two paper towels to get out as much moisture as possible
In a lightly oiled pan, add the tofu and seasonings. Mix well to combine, cook until slightly brown and firm in texture, roughly 10-15 minutes.
Meanwhile, whisk together all the ingredients for the cheese sauce until well combined. Once the mixture has reached a stretchy look, remove from heat. If it looks too thick, add 2 tbsp of water at a time. I ended up using about 4 tbsp of water. The mixture will appear thick and stretchy but will combine with rice, tofu, and broccoli well.
Cook rice and broccoli according to the package
Once done, add cheese sauce to the rice, then add in scoops full of tofu and broccoli until you have a good mixture. If you want to use the entire bag of broccoli and tofu, you may need to make another batch of the cheese sauce. As I stated, when I made this it was to use some left over broccoli I had in the fridge.
